Established in 1922, Hakkaisan Brewery is situated at the foot of Mount Hakkai, where it utilizes exceptionally soft spring water known as 'Raiden-sama no Shimizu'. The brewery, currently led by third-generation president Jiro Nagumo, is dedicated to the 'Tanrei Balanced' philosophy—creating high-quality, dry, and crisp sake that complements meals without being tiring to drink.

Description

This signature 'special' Honjozo features a clear and colourless appearance. The nose is delicate and fresh, offering subtle notes of yeast and highly polished rice. On the palate, it delivers a smooth and mellow texture with a light-bodied, grainy character and a quiet complexity. Its flavour profile is clean and refined with a touch of alcohol warmth and a refreshing, dry finish. Crafted using locally grown Gohyakumangoku and Todorokiwase rice polished to 55%, this sake is exceptionally versatile; chilling brings out its crispness, while gentle heating enhances the rich umami and savory characteristics of the koji rice. ABV 15.5%.
