Description
This sake is brewed in the traditional Yamahai style using a blend of Yamadanishiki and Kinmonnishiki rice varieties. It presents a complex aromatic profile filled with notes of mushroom, leather, star anise, and steamed rice, with subtle hints of milk chocolate and salted plum. On the palate, it is bold and expressive, offering a symphony of flavours including dashi, cocoa powder, butterscotch, and white pepper, supported by a massive umami backbone. The body is rich yet oddly refreshing, leading to a crisp, clean, and dry finish. It has an alcohol content of 15% and a rice polishing rate of 65%.
Food Pairing
The robust character and layered umami of this Yamahai sake make it an exceptional partner for deeply savoury and salty dishes. It pairs perfectly with traditional Japanese fare such as sushi, tuna sashimi, grilled mackerel, and sukiyaki. It also complements earthy ingredients like mushrooms and grilled meats, as well as Western options like aged cheeses or black garlic risotto. For the best experience, this sake can be enjoyed chilled to highlight its floral notes or warmed to 40°C to bring out fuller rice flavours and sweetness.
