Fukumitsuya Kazeyo-Mizuyo-Hitoyo 'Wind Water Man' Junmai originates from Kanazawa in the Ishikawa Prefecture of Japan. Founded in 1625 during the Edo period, Fukumitsuya is the oldest brewery in Kanazawa and is currently operated by the 13th generation of the Fukumitsu family. The brewery is a 'Junmai-only' establishment, dedicated to traditional brewing using only rice, water, and microorganisms, and is famous for its 'Hyakunensui' (100-year-old water) drawn from wells fed by Mount Hakusan.

Description

This sake is specifically designed as an approachable, 'fresh and easy-to-sip' introduction to the Junmai style. It is almost colourless with a very pale lemon tint and a delicate nose that produces notes of tropical fruit, honeydew melon, light florals, and a touch of anise. On the palate, it is light-bodied and lithe, offering a smooth mouthfeel with flavours of spring water, fresh sweet herbs, and crisp umami. The finish is long and refreshing, showcasing light acidity and lingering floral elements. It has a lower-than-average alcohol content of 9% to 12% and a rice polishing rate of 65% to 70%.
