Asahi Shuzo Dassai '45' Nigori Junmai Daiginjo Sake - 300 ml
Produced by Asahi Shuzo, this is the cloudy or unfiltered version of the brewery's world-famous Dassai 45 flagship sake. As with all sakes in the Dassai lineup, it is a Junmai Daiginjo, crafted using 100% top-grade Yamada Nishiki rice polished down to 45% of its original size. While many nigori sakes are known for being heavy or rustic, this expression is celebrated for maintaining the premium elegance and refined character for which the Dassai brand is globally recognized.
Description
This nigori sake presents a milky, off-white appearance due to the presence of fine rice solids (sake lees). The nose is aromatic and delicate, featuring scents of cream, rose water, muscat grape, and Japanese chestnuts. On the palate, it offers a soft and supple texture that is lighter and more graceful than many other cloudy sakes. It strikes a beautiful balance between juicy fruit notes of apple, pear, and melon and a mellow sweetness reminiscent of almond and honey. The finish is remarkably clean and refreshing, lacking the cloying heaviness often associated with the nigori style. ABV 13.5%–16% depending on the specific bottling.
Food Pairing
The creamy mouthfeel and fruit-forward profile of Dassai 45 Nigori make it an excellent partner for rich or spicy dishes where the rice solids can help soothe the palate. It is a fantastic match for Southeast Asian cuisine such as Pad Thai or tandoori chicken, as well as spicy Mexican fare. For a more Western-style pairing, try it alongside strawberry cheesecake, creamy pasta dishes, or a variety of soft and hard cheeses. It is best served well-chilled and should be gently turned (not shaken) before pouring to incorporate the rice sediment.
