Produced by Asahi Shuzo, the Dassai 45 is the brewery's most popular entry-level premium sake and the successor to the famous Dassai 50. In 2019, the brewery upgraded their standard from a 50% rice polishing ratio to 45% to achieve even greater clarity and refinement. Like all Dassai sakes, it is crafted exclusively from Yamada Nishiki rice, often called the king of sake rice, and falls into the highest official category of sake: Junmai Daiginjo.
