Aizu Homare Kiwami Junmai Daiginjo Sake - 720 ml
Aizu Homare Kiwami Junmai Daiginjo originates from Kitakata City in the Fukushima Prefecture of Japan. The Homare Sake Brewery was established in 1918 by Kosaku Karahashi, who transitioned from running a miso and soy sauce shop to managing a sake brewery. Currently led by fourth-generation president Hiroyuki Karahashi, the brewery is situated at the foot of Mount Iide and is renowned for its use of pristine mountain water and its expansive 4,000 square metre Japanese garden.
Description
This premium Junmai Daiginjo is crafted with a meticulous polishing rate of 50%, utilizing either Yamada Nishiki or Gohyakumangoku rice. It presents an elegant and refreshing sensory profile characterized by refined fruity notes of luscious melon and banana, alongside gentle floral undertones. The palate is smooth and silky, offering a white wine-like consistency with a crisp mouthfeel and a sharp yet soothing finish. Known for its complex depth and harmonious sweetness, it has an alcohol content of 16%.
Food Pairing
The fruit-forward and aromatic nature of this sake makes it an excellent partner for delicate and tender ingredients. It pairs exceptionally well with seafood such as salmon sashimi, scallops, and white fish, as well as lightly grilled sea bass. The sake's crisp acidity also complements savoury options like smoked ham, smoked duck, and soft cheeses such as Brie or Camembert. For a unique match, its floral profile helps balance the heat of spicy tantanmen or the richness of vegetable tempura.
