The boutique estate, La Cerbaiola Salvioni, is situated just outside the village of Montalcino on a breezy hillside ridge at an altitude of 420 to 440 metres above sea level. Founded by Giulio Salvioni and his wife Mirella, the winery operates as an artisanal, family led venture alongside their children, David and Alessia. Salvioni follows a strict quality driven philosophy, producing only a limited pool of around 8,000 to 13,000 bottles of Brunello annually. They prioritize meticulous vineyard care and low yields, famously vowing to entirely declassify their harvest to Rosso di Montalcino if the fruit fails to meet their exacting standards for absolute excellence.

Wine Description

The 2021 Brunello di Montalcino La Cerbaiola displays a sparkling, intense ruby red colour with a fine garnet sheen that will gracefully attenuate with age. The nose is wonderfully detailed, inviting, and complex, unfurling radiant aromas of ripe dark cherries, fresh plums, and dried roses, beautifully layered with hints of cedar, fresh leather, sweet tobacco, mint, and subtle peppery nuances. On the palate, the wine delivers a full bodied, supple, and noble structure rich in dry extracts. It balances a transparent and finely tuned core of primary red fruits against a crisp, firm nerve of vibrant acidity and beautifully managed, fine meshed tannins. Despite its robust 14.5% to 15% alcoholic volume, it remains incredibly balanced, elegant, and energetic, culminating in a radiant, long, and mineral driven finish accented by a touch of licorice and lavender. Crafted from 100% Sangiovese Grosso, the wine underwent indigenous fermentation and was aged traditionally for up to 36 months in large Slavonian oak casks before seeing extended bottle refinement. It enters its optimal drinking window in 2027 and will cellar magnificently through 2050.
