On the palate, the wine is medium-bodied and "sapid," showcasing a striking saline minerality and racy acidity. This 100% Carricante reached an ABV of 12.5%. To preserve its "volcanic energy," the fruit was fermented in concrete tanks and aged on its lees for three months, avoiding oak to emphasize the purity of the variety.
