Stratus Blanc de Blancs 2017 is a premium sparkling wine from the Niagara on the Lake region in Ontario, Canada.

The wine is produced by Stratus Vineyards, a 55 acre estate situated in the Niagara Lakeshore sub appellation. Established with a deep commitment to sustainability, Stratus became the world's first winery to achieve full LEED (Leadership in Energy and Environmental Design) certification in 2005. The winemaking team, led by J-L Groux and Dean Stoyka, follows a philosophy of 'low intervention' and 'gravity flow' production, utilizing a 1000 barrel geothermal cellar to craft wines that reflect the unique glacial till soils of their 44 individual vineyard blocks.

Wine Description

This Méthode Traditionnelle sparkling wine is characterized by its precision and elegance. It presents a light to medium body with remarkably vibrant aromas of orchard fresh green apple, Bosc pear, grapefruit, and lime zest, accented by delicate floral notes of acacia. On the palate, the wine is bright and energetic, offering flavours of citrus, quince, and honeysuckle, supported by a creamy texture and secondary notes of biscuit and brioche. The finish is crisp, bubbly, and persistent.

The 2017 vintage is a varietal composition of 100% estate grown Chardonnay. Following traditional practices, the wine was aged on its lees for six years prior to disgorgement to develop its signature complexity and fine mousse. It has an ABV of approximately 13.5% and is produced from grapes that are farmed according to certified sustainable standards.

Food Pairing

The high acidity and creamy citrus profile of this Blanc de Blancs make it an excellent pairing for classic appetizers such as gougères or fresh oysters.
