Established in 1840 by barrel maker Jean Febvre, Maison Simonnet-Febvre is one of the oldest wineries in Chablis and is currently under the ownership of Maison Louis Latour. The house is notable for being the only one in Chablis to produce Crémant de Bourgogne, reflecting a winemaking philosophy that values both traditional sparkling methods and the expression of distinct Kimmeridgian limestone terroirs.

Presents a pretty golden colour with greenish reflections and a lovely shimmer. The sensory profile features a spritely nose of sweet lemon rind, crunchy young peach, and green apple, layered with delicate floral notes and a marine minerality reminiscent of oyster shells. On the palate, the wine is medium-bodied and bone-dry, showcasing a soft yet precise mouthfeel driven by taut, saline acidity. It offers delineated fruit core of pear and citrus, underpinned by a chalky, sea-spray energy. Characterized by its cool-climate linearity and excellent aromatic persistence, the wine concludes with a brisk and saline finish. While the house produces some organically certified Premier Cru cuvées, the standard village Chablis is generally produced using sustainable viticulture.
