Saxum Heart Stone Vineyard 2022
This prestigious red blend originates from the United States, specifically the Adelaida District within the Paso Robles AVA of California’s Central Coast. Saxum Vineyards is a cult-favorite estate founded by Justin and Heather Smith. The winery is renowned for its "superstar" status, specializing in Rhône-style blends from limestone-rich soils. The Heart Stone Vineyard is a small, 7-acre site planted on a gentle south-facing slope of limestone and shale, which contributes to the wine's characteristic minerality and structural depth.
Wine Description
The Saxum Heart Stone Vineyard 2022 is a bold, "overwhelmingly impressive" red.
Appearance: Deep garnet-purple.
Nose: Intense and multifaceted, featuring aromas of baked black plums, boysenberries, and mocha, accented by savory flower, bay leaves, herbes de Provence, and black cardamom.
Palate: Full-bodied and velvety. It delivers a mouth-filling experience of roasted fig, blackberry sauce, and star anise. The texture is defined by grainy, "sandy" tannins and refreshing acidity that offsets the high concentration of fruit.
Technical Details: The 2022 blend is composed of 31% Syrah, 29% Grenache, 22% Graciano, and 18% Mataro (Mourvèdre). It is known for its high alcohol content, reaching 16.0% ABV. It is aged with very little new oak, mostly in larger puncheons, and bottled unfined and unfiltered.
Accolades

Food Pairing
This wine's "heavy artillery" style and rich texture make it a natural partner for robust meat dishes. It pairs exceptionally well with grilled or roasted lamb, dry-aged beef, or gamey dishes like goat curry. Its savory, peppery undertones also complement bold Asian flavors such as beef japchae or hearty smoked meats like brisket. For a cheese pairing, try a pungent, aged Mimolette.
