The sensory profile features a complex bouquet of dried cherries, pomegranate, and red currants, interwoven with high-toned notes of white pepper, flint, anise, and wild herbs. On the palate, the wine is full bodied and tightly wound, offering a laser-like focus with firm, chalky tannins and a long, saline finish. It is fermented at 180°C with 28 days of skin contact before aging for 30 months in large oak barrels and 9 months in the bottle. This wine is built for the cellar, with an optimal drinking window typically spanning 15 to 30 years from the vintage.
