This grappa is made from the pomace of Vespaiolo, the same grape as those used in Fausto Maculan’s famous Torcolato dessert wine. During the drying process the grapes are attacked by "noble rot" which creates compounds that concentrate the flavours and add depth and complexity to the grappa.
