Matsu Malvasia 'La Jefa' 2021
Matsu Malvasia 'La Jefa' is a white wine from Spain, produced in the Toro region. The name 'La Jefa' means 'The Boss'. Matsu's philosophy, whose name means "to wait" in Japanese, is a journey along the passage of time throughout three generations of winemakers. This project aims to elaborate wines that retain the traditional power of the Toro vineyards while combining it with freshness and elegance. 'La Jefa' is notable as the first white wine from the mainly red producing Toro region.
Wine Description
The wine has a straw yellow colour of medium intensity, with grey overtones and is very bright. The aromatic profile is highly complex, with notes of vanilla, ripe stone fruits, and creamy notes standing out. It is complemented with slight aniseed nuances, reflecting a nose harmonized by its ageing in casks. The varietal composition is 100% Malvasia, though some sources mention Malvasia and 'other varieties'. The grapes are sourced from plots between 50 and 150 years old.
It is an intense and full bodied white wine. The palate is mouth-filling and silky, with great creaminess. Flavours include creamy vanilla, melon, apricots, and peaches. It retains great acidity and vibrancy, which balances the sweet nuances and fine texture. The wine spends 14 months on its lees and is aged in new French oak barrels. Stylistically, it is a very balanced, elegant, and rich wine. The ABV is either 13% or 15% depending on the vintage. The optimal drinking window is to drink now. The wine is biodynamic.

Food Pairing
This wine is perfect for anyone who likes rich, creamy white wine styles and will elevate any meal with big flavours. Suggested pairings include roast suckling pig or milk-fed lamb. It also pairs well with salads, seafood, white meat, rich fish, shellfish, and charcuterie.
Vintage Quality
General information for the Toro region highlights the continental climate with an Atlantic influence, which is dry with many hours of sun, and very cold in winter. A considerable temperature contrast between night and day favours an optimum maturation of the grape.
