Kavalan Solist Oloroso Sherry 57.8% ABV
Kavalan, established in 2005, is Taiwan's first whiskymaker and only family-owned whisky distillery. The distillery is backed by the King Car Group, which had a long-term goal of producing a world-class Taiwanese whisky. Kavalan's unique approach involves harnessing Taiwan's subtropical climate to accelerate maturation, a pioneering method developed with the help of whisky expert Dr. Jim Swan.
Whisky Description
-
Colour: Dark and mouth-watering raisin.
-
Aroma: Complex with multi-layers of dried fruit, nuttiness, and spices, alongside notes of marzipan and vanilla. Other notes include black licorice and cocoa powder.
-
Palate: Rich, oily, and full-bodied. It presents pleasant dried fruit and spices, with a rich sherried taste, dark chocolate, cinnamon, clove, black pepper, and sometimes a hint of tobacco. The texture can be thick and creamy.
-
Body: Full. This whisky is complex, even for a sherry cask expression, and possesses a naturally smooth and rich character. It is best served neat.
-
Finish: Long, lingering on the mouth with dried fruit, spices, and a hint of fine coffee.
Food Pairing
The rich, full-bodied character and intense dried fruit notes from the Oloroso sherry cask pair well with complex, rich flavours. Aged Gouda or strong, salty cheeses. The saltiness and sharpness of the cheese offer a wonderful contrast to the whisky's richness and sweetness.
