J.P. Wiser's 13 Year Old Japanese Oak Whisky
Introduction
J.P. Wiser's 13 Year Old Japanese Oak is a limited-release expression from the J.P. Wiser's Wood Series, produced in Windsor, Ontario. It is crafted at the Hiram Walker & Sons Distillery, a facility with a heritage dating back to 1858 that remains a cornerstone of North American distilling. Master Blender Dr. Don Livermore developed this series to explore the impact of diverse wood species on traditional Canadian rye, utilizing experimental casks with Japanese oak inserts to bridge the gap between Canadian craftsmanship and Eastern tradition.
Spirit Description
This whisky presents a deep, captivating amber hue. The nose is highly aromatic, featuring notes of vanilla bean and creamy oakwood layered with dried fruits, praline, and a hint of nutmeg. On the palate, the spirit reveals a complex texture with flavours of toasted sugar, salted caramel, and cinnamon bark, characteristic of the 'exotic' influence of Japanese oak. These sweet and woody notes are balanced by a gentle embrace of black pepper and signature rye spice. The finish is long and warming, leaving a persistent trail of dried oak and sweet spice. It is bottled at 40% ABV.
