
Holzer Granit Fernet Bitter – 700 ml
Holzer Granit Fernet Bitter (formerly Fernet Hunter Granit) is the second-generation expression from the Holzer family, produced in the Brunnwald Forest of northern Austria. Created by Raphael Holzer in collaboration with his father, Gilbert, this "true bitter" was designed to capture the dry, stoic essence of the granite rocks found in the Mühlviertel region. It represents a deeper dive into the family’s century-old distilling archive, stripping away the sugar to highlight the raw, herbal intensity of the Austrian Alpine landscape.
Spirit Description
What distinguishes "Granit" from the original Holzer Fernet is its significantly lower sugar content and a reinforced bitter profile.
Production: The spirit uses a base of local sugar beet, barley, and corn spirits. Botanicals are dried and macerated for 24 hours before a two-week slow-drip extraction process in a percolator, which preserves their medicinal properties.
Botanicals: In addition to the core "Hunter" blend of Arnica, Orris Root, and Lavender, Granit adds Roman Chamomile for enhanced aromatic complexity. The recipe foundation is further altered by increasing the ratio of bitter roots.
Nose: Mellow and warm, featuring soft chamomile, cooked lemon, and orange jam, accented by notes of limestone and "hot granite".
Palate: Very dry and robust. Coating flavours of bitter flowers and chili spice are balanced by a distinct mineral texture derived from the distillery’s own soft-water wells.
Finish: Lingering and evolving, with earthy spiced sweetness and a clean, aromatic exit.
Technical Details: Bottled at 29% ABV with all colour derived naturally from the 15 botanicals.
