Dalmore 25 Year Old is an ultra premium single malt Scotch whisky from the Highland region of Scotland. The Dalmore Distillery was established in 1839 by Alexander Matheson and is situated on the banks of the Cromarty Firth. Currently owned by Whyte & Mackay, which is part of the Asian company Emperador Distillers Inc., the distillery is iconic for its 12 pointed Royal Stag emblem—a symbol granted to the Mackenzie family in 1263 for saving King Alexander III. Spirit Description
Master Distiller Richard Paterson meticulously crafted this expression using a complex, multi stage maturation process. The spirit begins its journey in American white oak ex bourbon casks before being divided for secondary aging in rare 25 year old Palomino Fino sherry butts and first fill bourbon barrels. These whiskies are later married in bourbon barrels before a final finishing period in Tawny Port pipes from Portugal.
Colour: A deep amber with copper highlights.
Aroma: The nose is exotic and luxurious, featuring notes of citrus, marzipan, vanilla pods, treacle toffee, and fig cake with a hint of sweet balsamic.
Palate: It delivers a silky and full bodied mouthfeel with flavours of orange peel, chocolate truffles, liquorice, sweet damsons, and sherry soaked raisins.
Body: Dense and unctuous, the texture is often compared to a 'mohair touch' due to the wide stills that produce a rich, oily spirit.
Finish: The experience concludes with a long, warm finish of maple syrup, dark chocolate, and spiced gingerbread.
