Cave Springs Chardonnay Estate 2023

Introduction

This white wine originates from Canada, specifically from the Beamsville Bench sub-appellation of the Niagara Peninsula in Ontario. Founded in 1986 by the Pennachetti family and winemaker Angelo Pavan, Cave Spring Vineyard is a pioneer of noble European varietals in the region. The winery's philosophy is rooted in a deep commitment to terroir and sustainable practices, managing 72.5 hectares of prime vineyards nestled along the Niagara Escarpment.

Wine Description

Cave Spring Vineyard Chardonnay Estate 2023 displays a bright and fresh sensory profile. The nose is highly attractive, offering aromas of orchard fruit such as pear and yellow plum, accented by citrus, anise, and vanilla notes. On the palate, the wine is medium to full-bodied and well-balanced, featuring flavours of ripe peach and apple interplay with lemon yoghurt and subtle hints of spice. It is characterized by its remarkable freshness, delicate barrel influence, and a lasting dry finish that replays notes of anise. This 100% Chardonnay has an ABV of 13.0% and a residual sugar level of approximately 2.0 g/L. While the winery is a leader in environmental stewardship and is certified by Sustainable Winemaking Ontario (SWO), this specific bottling is not certified organic. The optimal drinking window is from release through the next three to five years.
