The winery's philosophy involves blending several Premier Cru vineyards, specifically Les Aigrots, Les Tuvilains, Les Sizies, and Sur les Grèves, which are vinified separately to preserve their individual 'climat' characters. The estate utilizes its ancient cellars at the Bastions of the Château de Beaune, where 7-metre thick walls provide naturally stable conditions perfectly adapted for aging Premier Cru wines.

Wine Description

This 2019 vintage presents a pale gold colour with subtle green shades. The nose is energetic and complex, featuring aromas of white-fleshed fruits like pear and peach, candied citrus, and honeysuckle, accented by hints of brioche, gingerbread, and smoky oak. On the palate, the wine is medium to full-bodied, associating a rich and enveloping texture with a vibrant core of lemon peel and lime. It is characterized by its lovely depth, subtle oak integration, and a long, salty mineral finish.

The wine is 100% Chardonnay, harvested manually and carefully sorted. Following pressing, it is matured for 9 to 10 months in French oak, with up to 15% new oak depending on the vintage, and a further 3 to 4 months in stainless steel vats to refine its purity. The 2019 release typically possesses an ABV of approximately 13.5% to 14% and has significant aging potential of five years or more.
