The Billecart Salmon Brut Reserve, often referred to as 'Le Réserve', displays a straw-gold colour with a persistent mousse and fine, slowly rising bubbles. The nose is aromatic and precise, offering scents of fresh pear, apple blossom, and citrus zest, layered with subtle floral notes and hints of biscuit or brioche. On the palate, the wine is light and harmonious, featuring a delicate texture with flavours of white flesh fruits such as crunchy apples and stone fruits. It is characterized by its remarkable balance, fresh acidity, and a long, persistent finish marked by minerality and a touch of roasted nuts. The varietal composition typically consists of 40% Pinot Meunier, 30% Pinot Noir, and 30% Chardonnay, often incorporating up to 50% to 60% reserve wines from 15 different vintages. The ABV is 12%. While the house emphasizes sustainable and meticulous vineyard management, this wine is not certified organic.
