Ad Vivum Cabernet Sauvignon 2018

Introduction

This red wine is from the United States, specifically from the Yountville subregion of Napa Valley, California. Ad Vivum is owned by winemaker Chris Phelps, whose storied career includes crafting 12 vintages at Dominus Estate and eight at Caymus Vineyards. The winery operates with a philosophy of creating 'New World wines with an Old World sensibility', sourcing exclusively from the meticulously farmed Sleeping Lady Vineyard situated on the western flanks of the Mayacamas Mountains.

Wine Description

The 2018 Ad Vivum Cabernet Sauvignon is deep garnet-purple in colour with a violet edge. The exuberant nose offers aromas of blackcurrant jelly, warm plums, and black raspberries, accented by notes of violet, mocha, tobacco, and anise. On the palate, it is full bodied and statuesque, displaying lush layers of blackberry and blueberry fruit supported by firm, ripe, and grainy tannins. The wine exhibits a tight-knit structure with lively acidity and a long finish marked by mineral and chalky undertones. This 100% Cabernet Sauvignon was aged for 20 months in French oak (75% new) and has an ABV of 14.5%. While it is beginning to open, the optimal drinking window extends from 2024 through 2053.

Food Pairing

The robust structure and intense fruit profile of this wine pair exceptionally well with rich red meat dishes such as grilled ribeye steak, braised short ribs, or beef galbi. Its herbal and earthy nuances also complement venison curry or mushroom risotto. For a cheese course, aged varieties like Gouda, Manchego, or Comté are ideal selections.

Vintage Quality

The 2018 vintage in Napa Valley is considered exceptional, characterized by a long and steady growing season without extreme heat spikes. Moderate temperatures through the summer and autumn allowed the grapes to achieve full phenolic ripeness and deep colour while maintaining vibrant acidity.
